Chicken Uppu Kari – Traditional South Indian Recipe

Ingredients:

  • 500 g Chicken Pieces
  • Salt
  • ½ tsp Turmeric Powder
  • 1 tbsp Ginger Garlic Paste
  • 5 tbsp Gingelly Oil
  • ½ tsp Fennel Seed
  • ½ tsp Urad Dal
  • 20-25 No’s Round Dried Red Chilies
  • 150 g Shallots
  • 3 Spring Curry Leaves
  • 1  tbsp Crushed Garlic

Method:

step 1: Clean and wash the chicken well, cut into small to medium size pieces.

step 2: Marinate the chicken with salt, ½ tsp turmeric powder and 1 tbsp ginger garlic paste. set aside for 30 Minutes to1Hour.

step 3: Heat a pan on medium flame. Then add 5tbsp gingelly oil to the pan. Add in ½ tsp fennel seed and ½ tsp urad dal split and let it splutter.

step 4: Now add 20 to 25 no’s round dried red chillies along with shallots, curry leaves and crushed garlic. Saute this until the raw smell goes off and add salt as required. Add chicken with this and mix well. Close the lid and keep it in low flame. Stir occasionally. Cook for 25 to 30 Minutes.

step 5: Once it becomes dry, taste the salt and add curry leaves. Switch off the flame Simple and delicious Chicken Uppu Kari is ready to serve now. Enjoy!!!
