- 1 Kg Chicken drumstick
- 4 Cup Butter Milk
- 1 tsp Salt For Marination
- 1 ½ tsp Garlic Powder
- 1 tbsp Red Chilli Powder
- ½ tsp Mixed Herbs
- ½ tsp Mustard Powder
- 2 tbsp Vinegar
- 3 tsp Soya Sauce
- 2 tbsp Chilli Sauce
- 2 tsp White Pepper Powder
- HP Sauce or BBQ Sauce
- 4 Cup Maida / All purpose flour
- 2 tsp Milk Powder
- 1 tsp Red Chilli Powder
- Cold Water
Here I have taken 1 Kg Chicken drumstick. If you want you can take chicken thigh pieces also. Clean and wash the chicken drumstick and make 2 vertical slits on it.
Next, add buttermilk and salt to a bowl and whisk it well. Now add the chicken to this buttermilk solution then mix well. Set aside for one hour.
After 1 hour, drain the chicken well. Marinate the chicken with
- red chilli powder,
- white pepper powder,
- garlic powder,
- soya sauce,
- red chilli sauce,
- mixed herbs,
- HP sauce,
- mustard powder, and
- salt as required.
Soya sauce and chilli sauce contain salt and in the previous step we have already added some salt, so adjust the salt as per your taste.
Preferably marinate overnight or at least 4 hours for better results.
Next, we need to coat the marinated chicken in flour, for that add maida, milk powder, and red chilli powder in a bowl. Mix well to combine. Add marinated chicken drumsticks to this flour one at a time, remember one at a time. Just cover the marinated chicken in flour for a light coating.
After coating three-four pieces of chicken immediately sieve the flour to remove the lumps in the flour. Sieve the flour after coating each batch of chicken and also in the second coating. Doing this will reduce the wastage of flour and forms a perfect crust.
Now we need to make the second coating, for that takes some cold water in a bowl. Dip each piece of chicken in that water for 3 to 4 seconds then add to the flour. Before starting cover the chicken in flour then rubs it with flour in a clockwise direction. Remember never let the chicken come in contact with your hands and keep your hands dry always before touching the floor. Rub this until you get a nice crust over the chicken. Always prepare one batch of chicken at a time and fry it immediately. Otherwise, the crust becomes soggy and start sticking.
Heat some oil in a pan. Oil temperature should be low to medium always. Add chicken to the oil using a tongue. Cook for until it gets a nice light golden brown colour. With this our crunchy KFC style fried chicken is ready. Serve it hot with tomato ketchup or Hot sauce. Enjoy!!!!!
